Here is what I am up to:
Pumpkin Pie
Ingredients
- 1 can 100% pure pumpkin
- 6 oz of non-fat evaporated milk
- 2 oz of almond milk
- 4 large eggs
- 1 cup of Stevia (or 1 1/2 cup of sugar)
- 1 tablespoon of pumpkin pie spice
- 1 unbaked deep dish pie crust
- Preheat oven to 425 degrees.
- Beat eggs in a separate bowl.
- Mix everything together in large bowl, gradually pouring in evaporated and almond milk.
- Pour mixture into pie crust and place pie crust on foiled covered cookie sheet.
- Put in oven at 425 degrees for 15 minutes and then reduce temperature to 350 degrees for 40-50 minutes.
- Let cool for two hours.
Warning: Do not try this recipe with non-fat evaporated milk and Stevia...maybe there were too many eggs as well. These pies looked great, but tasted like artificial sweetener/cardboard. Fail.
Sweet Potato Casserole
Ingredients
- 4 large sweet potatoes
- 3 tablespoons of butter or to taste
- 4 ounces of non-fat evaporated milk
- 2 tablespoons of orange juice
- 1/4 teaspoon of nutmeg
- 1/2 to 3/4 cup of brown sugar
- 1 cup of marshmallows
- 1/2 cup of crushed walnuts
- Preheat oven to 350 degrees.
- Wash, peel, and dice sweet potatoes. Then boil until soft.
- Mash sweet potatoes and then add all of the ingredients and mix with a hand mixer until smooth.
- Pour into casserole dish and bake for 30 minutes.
- Add marshmallows and nuts just before taking out of the oven.

Dressing
Ingredients
- 2 bags of Pepperidge Farm dressing
- 1 large onion, chopped
- 1 1/2 cups of celery, chopped
- 1 cup fresh parsley (optional)
- Lots of turkey or chicken broth
- Preheat oven to 350 degrees.
- Spray two baking dishes with cooking spray.
- Mix all ingredients together and then fill dishes.
- Bake for 30 minutes.
- Enjoy with fresh cranberry sauce!

Corn Pudding
Ingredients
- 1 can creamed corn
- 1 1/2 tablespoons of flour (I used spelt flour)
- 3/4 cup sugar (I used Stevia)
- 3 eggs
- 1 cup milk (evaporated, if you like....i used evaporated in one batch and almond milk in the other)
- 1/2 teaspoon salt
- 2 tablespoons of butter
- Preheat oven to 375 degrees
- Combine all ingredients and mix.
- Pour into greased dish.
- Put in oven for 45-60 minutes or until stiff.
- Enjoy!

Ingredients
- 1-2 lbs of fresh green beans
- Sesame seed oil
- Salt and pepper
- Preheat oven to 400 degrees
- Put green beans in a large ziplock bag sprinkle with sea salt and pepper. Pour in a few tablespoons of sesame seed oil and then shake to fully coat the beans.
- Spread beans onto cookie sheet covered in foil and place in oven for 15-20 minutes or until done.
