Sunday I tried out a new recipe; pumpkin pancakes. I love, love, love pumpkin pie so I thought this would be a good recipe to try. They turned out very tasty. Hay Hay was a big fan, so I think we'll be making them again in the near future.Here's the recipe:
2 eggs
1 c. milk
1/2 c. cooked pumpkin
1 3/4 c. Bisquick
1 tbsp. sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. chopped nuts; optional
1 c. milk
1/2 c. cooked pumpkin

Mix all ingredients well, and cook on hot griddle until golden brown. Yields 2 1/2 dozen 4 inch pancakes.
